Carrot Cake Jam

Yes, it sounds odd, I know, but just wait until you try it! This jam contains crushed pineapple, thinly sliced carrots, finely diced pears, and shredded coconut with all the warm spices of carrot cake.  Pairs perfectly with cinnamon raisin bagels & cream cheese, a wonderful addition of flavors to top baked brie, or you could fold into a puff pastry with cream cheese for a sweet treat, also good just striaght out of the jar!
